Jerk seasoning is used in the Caribbean to flavor steak, pork, poultry and fish.  It is used as the main ingredient in a jerk marinade.  We are in the process of creating a booklet of recipes and serving ideas for all of our seasonings.  The section featuring our jerk seasoning will have everything to offer from hot chicken wings to jerk pork, chicken and fish.

For a basic jerk marinade use 1 teaspoon of this jerk seasoning , 1 tablespoon of black pepper, chopped garlic, finely chopped onion, chopped hot pepper, 1 1/2 tablespoons of soy or Worcestershire sauce.  Allow the meat to marinate for at least one hour.
